Our story
How we got our start?
Darron Burke fell in love with a beautiful Colombian girl named Eliana. She took him to her country and introduced him to her family, where Darron was renamed Don Pablo by Eliana’s grandmother as it was much easier to pronounce. Darron and Eliana got married and started Don Pablo Coffee together.
What makes our product unique?

From sourcing only the best Arabica beans from around the world, to slow roasting-to-order in small batches, we pay meticulous attention to detail at each stage of production to ensure a fresh, rich, delicious cup of coffee every time.

Honduran Marcala
Subtle Earth Organic
is an exceptional Honduran coffee from the
Marcala
region.
No chemical inputs
are used.
The “cherries (fruit of the coffee bean),” are composted and used as fertilizer, along with vermiculture, and fewer insects are present at the altitude that it’s grown, so no insecticides are necessary. If there ever is a bug problem, farmers sometimes plant peppers as a repellent.
This
high altitude coffee
is
very dense,
and thus has
“depth of flavor”
and we are able to
roast it just right
to bring out its
natural flavor characteristics
and a
wonderful sweetness.
How to brew the perfect cup of coffee:
T
raditional Drip Machine:
Add one level to slightly rounded measuring tablespoon (10g) of finely ground coffee (fine granular sand, not yet a powder) to each six ounce cup of water (177 ml) and adjust to taste.
F
rench Press:
Add 1-2 measuring tablespoons (10-20g) of coarse ground coffee per cup (177ml) of water and adjust to taste. Never add boiling water.
E
spresso Machine:
Fill porta-filter to line with espresso ground coffee. It’s important to get the precise grind to ensure maximum crema.
H
and Drip Method:
Add 8-10 grams of medium-fine ground coffee per cup. Heat water to 190-195 degrees, (88-90.5 c) pre-soak grounds, slowly add water in a clockwise motion. Adjust to taste.

Our Family Ties
We have relationships at the point of origin that give us a dedicated source of supply of the finest Arabica beans available. We grow, pick, and process our own coffee beans in Colombia and manage the production of over 1,000,000 coffee trees in South America through our Sharing Certified Program. We never blend our coffees with Robusta, past crop, or defective beans. We have an on staff Q Grader who ensures the quality of every bean we roast. Our roasting facility is AIB Food Safety Certified, and Certified by CCOF for Organic Production.
The Art of Roasting
We slow roast our special beans in small batches to ensure they reach optimum flavor. Our loyal customers wouldn’t have it any other way. We found people who really appreciate a great cup of rich, aromatic, coffee can taste the difference between our fresh, properly roasted beans, and others that are roasted by the metric ton and sold by huge corporations. We roast in multiple small batch coffee roasters in a process that is half art and half science. We artisan roast by sight, smell, and sound to assure that the natural sugars in the bean are being caramelized just right!
Freshness is Everything!
Besides the finest quality Arabica beans and artisan roasting, another secret to great tasting coffee is freshness. The shorter the time from the roaster to your cup, the better the coffee tastes. We accomplish maximum freshness by roasting to order, instead of on a production schedule like our competitors. We roast to order in regional small batch roasting facilities in the U.S. You can smell the difference! Make your coffee as strong or as mild as you like by adjusting the ratio of coffee to water. Cafe Don Pablo coffees are always rich, smooth and delicious!
