    INFORMATION
    This Don Claudio SHB EP coffee is from the Brunca region in southwest Costa Rica. The Brunca region is marked by mountainous terrain and volcanic soil. High altitudes provide the cool climates that are ideal for growing sweet and dense beans.   The Don Claudio coffee is picked in the area of La Piedra De Rivas and for this particular coffee, the ripe cherries are picked during the central part of the harvest.
    The main varietals are Caturra and Red Catuai.   Farmers selectively handpick cherries and deliver them to a nearby wet mill. The mill follows processing methods that are designed to carefully protect the environment.   In Costa Rica, this typically means using centrifugal force to remove mucilage, in lieu of fermenting.   This method helps reduce water use and limits the amount of excess nutrients in water run-off from the mill. Parchment is washed and sundried.   The cherries are all processed by the Beficio Coopeagri.  The Don Claudio coffee is processed in both washed and natural methods.  Our Don Claudio is fully washed.   Coopagri, Costa Rica’s largest farmer cooperative, was founded in 1962 to help increase production and market access for small- and medium-sized and boasts more than 10,000 members.   Coopagri continues to focus on the well being of members and their farming communities.  They spearhead projects that range from building medical offices where members can access medical care to growing an already extensive agronomy support and outreach program.  The cooperative produces organic fertilizer that members can access to help them maintain organic and ecologically healthy farms. They also run a local café that showcases the coffees their members produce.
    Cupping Notes are gathered by using the cupping method to get a general idea of what natural flavor notes a coffee contains.
