This coffee is perfect in any roast level. I usually keep it in first crack to keep the chocolate notes. Since it is a grade 4 there are defects and different sized beans. Also after roasting you will notice some unripes lighter colored beans that I usually pick most of them out before grinding coffee to drink. Unripe beans taste kinda like slightly bitter peanuts. Some roasters leave them in. This coffee is actually drinking nice by itself but I also use it in a blend to give your blend nice chocolate notes. I also have better coffee as well with more complexity.

The Sidama region’s rich soil lends rich nutrients and deep color to its coffee. There are few views as striking as a hillside washing station with more than 300 raised beds full of crimson cherries drying in the sun. Good weather mean good coffee, and this year’s harvest of Sidama is bountiful and flavorful thanks to healthy rainfall during the growing season.
