General Description: Mexico’s diverse geography, from the soaring altitudes of the country’s four mountain ranges to the beautiful coastal regions along the Pacific, supports diverse farming practices and a broad variety of crops. Chiapas is the country’s southernmost state, home to the Sierra Madre de Chiapas Mountain range. To its west are the coffee growing regions of Oaxaca and Vera Cruz, but it is the beans of Guatemala’s Huehuetenango region, directly to the east, with which Chiapas coffee shares so much character. The continued development of a network of Fair Trade farmers’ cooperatives is helping local people slowly improve their quality of life.

Farmers consisting of indigenous Mayan peoples from the tribes of Tzotzil, Tzeltal, Mame, Chuj and Zoque were concerned about chemical inputs, soil erosion, fish and bird deaths, and the emigration of their young people seeking jobs. In addition, they wanted to improve quality and yield, and get affordable credit. So in 1992, they formed the FIECH, Coffee from the Indigenous Ecological Federation of Chiapas. The state of Chiapas is located in the Sierra Madre Mountains and receives the perfect combination of rainfall and sunshine to create this strictly high grown bean.
This particular fairly traded, shade grown, and bird friendly coffee is served in finer restaurants throughout Mexico. In 1996, just 4 short years after forming, the Mexican government awarded the cooperative the National Ecological Prize for environmental stewardship.
Roasting Notes:
Medium body with mild acidity and balanced, with delicate fruit and spice overtones. A hard bean that takes a dark roast well. I would use this coffee in French or Italian roasts but also cups well in the City - Full City range. Chiapas, the tropical jungle that is the most southern eastern part of Mexico, borders with Guatemala. Chiapas is the coffee little brother of Guatemala's Hue Hue Tenango region, and this comes through in the cup. The Chiapias coffees are brighter, sweeter, with a definite clove spice to compliment the apricot fruit that is in the cup.

This coffee is produced in the state of Chiapas, mainly in the Soconusco region. All the coffee is grown at an altitude between 900 and 1,100 meters above sea level and we make sure that our clients are delivered a true High Grown EP coffee with the respective cup profile. This coffee is a perfect combination of both.The normal harvest season starts in December and ends in April. After a careful quality test, all the coffee is milled in a certified dry mill in Tapachula, Chiapas. This coffee is allowed less than 15 imperfections per 300 grams. The coffee is exported January through September.

I'm (Gary) Darling's Husband I learned the art of roasting coffee in Costa Rica where I went to study the fine art of roasting this incredible bean we call coffee for long 6 years. I learned about roasting coffees by the altitude & soil conditions in which they were grown. There is a major difference in a coffee bean grown at lower altitude and a coffee bean we call (SHB) grown at a much high altitude in this industry.
Every Morning We Start Roasting At 4:00 A.M.
I lit our Probat roasters for the day to roast only the coffees that have been ordered the day before. Yes, we take our coffee seriously in fact very seriously. Small batch roasting is more expensive because it limits the amount of coffee we can roast in one day but, this roasting technique ensures that each batch of coffee will be superior in quality and roasted evenly to the desired roast profile, not mass produced. This process draws out the best possible flavor in each batch. Small batch roasting permits a higher quality of standards in coffee throughout the complete process: from choosing the correct charge & drop temperature & then to slowly roasting each small batch to perfection.
All Our Coffees Are Packaged in 1 Pound Bags That Are Nitrogen flushed.
Nitrogen is an odorless and tasteless gas that is heavier than oxygen. It is typically used in the food industry because of its ability to reduce the staling process. Since Nitrogen has no smell or taste, it won't compromise the quality of the coffee taste but, will ensure its freshness for a long period of time. When paired with our one way values on our coffee bags it will keep your coffee fresh roasted coffee fresh for months to come. This is a time consuming process & adds to the cost of our coffee in both bags and labor but, we think it is worth it, because most people only drink around a 1/2 to 3/4 of a pound of coffee a week.
