    This coffee is graded SHG EP - the highest grade a specialty arabica Guatemalan coffee can receive.
    SHG (Strictly High Grown) specifies that the coffee was grown at an altitude above 1350 meters.
    EP (European Preparation) specifies that the raw beans are all hand sorted to remove any defective beans and foreign material.
    ROAST PROFILE
    When
    roasted light to medium roast
    , this Guatemalan coffee brews
    a complex cup with underlying caramel sweetness and a soft fruit acidity of red grape & peach. A
    wonderful nougat and brown sugar sweetness lingers in the finish.
    If you wanted to accentuate more of rich sweetness in the coffee and back off the acidity, we recommend lowering the gas a good bit before first crack to allow you to develop more sugars towards the end of the roast. Or try shorting the development to make the fruit notes pop!
    Dark roasts
    develop layers of dark toffee sweetness with raisin and blackberry jam fruits notes. We
    think no matter what you do, this coffee will delight and impress!
