    COFFEE PROFILE
    The Organic certified Kotowa Estate is synonymous with fine Panama coffee. The farm is serious about coffee and produces the quintessential Boquete cup profile - bright, clean, nuanced and sweet.
    This smooth organic Panama whole bean coffee delights with mild green apple sweet citrus aromatics, nutty aroma and a pleasing caramel-like, chocolate body.
    Panama single origin coffee is prized for its spicy floral notes, a velvety mouthfeel and a rich and balanced finish.
    ROAST PROFILE:
    Medium roast (City+)
    is where you will experience the most citrus and caramel aspects of this cup, which is, after all, what makes it so special. Frankly, this coffee is fantastic anywhere after 1st crack through early 2nd crack. Dark roast (Full City) will develop more dark chocolate and raisin. Medium roast has more nuttiness, Dark roast has more chocolate, but both will reveal winey fruited notes, red currant in the light stages, becoming raisin and dark berry at Full City roast.
    FARM PROFILE:
    This organic certified coffee estate overlooks the beautiful Boquete mountainside and the Baru Volcano. Sitting at 1900 meter above sea level, the estate is naturally blessed with mineral volcanic soils and a climate where the perfect combination of rain, wind, sunshine, clouds and temperature produce an organic coffee with a distinctive character.
    The Kotowa farm is managed using strictly organic production methods, meaning no herbicides or pesticides are used on the estate. All fertilizer used on the farm is organic and is produced by treating coffee pulp produced during the wet milling process.
