This coffee is graded SHG EP - the highest grade a specialty arabica Guatemalan coffee can receive.
SHG (Strictly High Grown) specifies that the coffee was grown at an altitude above 1350 meters.
EP (European Preparation) specifies that the raw beans are all hand sorted to remove any defective beans and foreign material.
ROAST PROFILE
When roasted light to medium roast, this Guatemalan coffee brews a complex cup with underlying caramel sweetness and a soft fruit acidity of red grape & black cherry. A
wonderful nougat and brown sugar sweetness linger in the finish.
If you wanted to accentuate more of rich sweetness in the coffee and back off the acidity, we recommend lowering the gas a good bit before first crack to allow you to develop more sugars towards the end of the roast. Or try shortening the development to make the fruit notes pop! Dark (

Our organic Guatemalan coffee is farmed on the Zelaya Estate renowned for producing some of the best specialty coffees in Guatemala.
The farm is located in Antigua, a region that sits between three volcanoes (Fuego, Acatenango & Agua). The
Fuego volcano is continuously active and deposits a fresh layer of ash rich in soil-nourishing minerals all around the valley
.
In Antigua, shade is especially dense to protect the coffee plants from the region’s occasional frost.
Antigua Guatemala coffee is known for having a full and velvety body, a rich and lively aroma, and a fine acidity.
